For years, I have made my own pizza sauce. It isn’t really a recipe, as I don’t usually measure, but just add and taste. We love Pizza and there really is only one restaurant that does a GF pizza we can have, and it is pricey.

Our favorite crust is from a cookbook

I found (after much experimentation) that our favorite crust recipe is from the Cookbook “Gluten-Free Artisan Bread in Five Minutes a Day” by Jeff Hertzberg, M.D. and Zoe Francois. The book is one of our most used GF cookbooks, well worth buying. I can’t share the crust recipe here, but we have found it to be wonderful. I don’t let it chill for more than a few hours, as I don’t like using the dough (or any of the doughs in the book) after they bulk proof for too long, as I don’t like the yeasty alcohol flavor it takes on. However, using it within a day, they are lovely.

The sauce makes the pizza

This sauce on a Gluten-Free pizza crust with your choice of toppings is delicious. I use Lodge Cast Iron Pizza Pans to cook my pizza. Cast iron is, in my opinion, the best choice to get a nice crisp crust. These pans make it easy to roll out the dough in the pan. Since GF dough tends to be more batter like, this is an important feature. I place corn meal on the pan before rolling out the crust. I do pre-bake my crusts for about 15 minutes before topping and final baking.

This sauce is great in a pizza pocket, bagel pizza or any application you can think of to use pizza sauce for. I usually make up a double batch and freeze half, to make pizza night even easier. What is your favorite way to eat gluten-free pizza? I like mine served with salad and I love to dip my pizza in homemade ranch dressing.

Pizza Sauce

Ingredients

  • 24 oz tomato sauce

  • 2 Tablespoons tomato paste

  • 1/2 medium onion, finely diced

  • 1 clove garlic, minced

  • 1 Tablespoon of Penzey’s Pizza Seasoning

  • salt and black pepper to taste

Directions

  • Mix all ingredients in sauce pot.
  • Heat on medium, stirring often, till it comes to a simmer
  • Simmer for 15-20 minutes till thick, and flavors are melded
  • Taste for salt and pepper, and add accordingly.

Notes

  • The ingredients in Penzey’s Pizza Seasoning are: salt, fennel seed, turkish oregano, sugar, garlic, tellicherry black pepper, sweet California basil, onion, crushed red pepper and cayenne red pepper
